Villa Tramonto offers a fish cuisine inspired by the simplicity of Tuscan origins. Our seaside restaurant provides daily menus of fish and vegetables for a fresh and varied culinary experience. Full or half board is not available. 

Our GilCook combines in each dish the simplicity of preparation with the freshness of local ingredients, respecting the local traditions. 

Excellences such as EVO oil — Extra Virgin Olive Oil — from the Tuscan hills, artisanal pasta made from ancient grains, wines from small producers in Bolgheri, Suvereto, and the Violetti Artichokes fromVal di Cornia, allow diners to appreciate both seafood cuisine — with the undisputed stars being bluefish and Piombino anchovies — and inland dishes. Zero Kilometer wines are a perfect accompaniment, offering the right balance of quality and price.

My cuisine is made of simple flavors, created from a mix of fresh products, especially fresh fish and vegetables from the Tuscan hinterland. The essential preparation, rooted in Livornese tradition, makes the dishes light, tasty, and full of flavors and aromas. 

Fish Dishes 

Among my favorites are the fish dishes, because we are just steps away from the Mediterranean Sea, and the scent of the sea has always blended with that of my kitchen, pushing me to experiment. How can I not mention the famous fish stew: Cacciucco — Beware! The real Livornese dish must have the 5 C’s. 

Then, a refined yet simple dish: baked anchovies, alongside my personal must-have Spaghetti with Clams, and the classic and flavorful grilled octopus.

Vegetarian Dishes 

For plant-based food lovers, we offer our fresh seasonal vegetables, revisited with exclusively plant-based ingredients. 

Here are some recommendations from a true Livornese: chickpea flatbread (torta di ceci or cecìna), and the legendary Ponce alla Livornese — an aromatic drink made with coffee, rum, sugar, and lemon — the perfect ending to a flavorful meal.
